Yummy Summer Recipe

Apricot Pork with Fresh Green Beans

olive oil
4 pork chops, rubbed with salt and pepper
4 apricots, cut into wedges (or you can used canned)
2 T honey
3 cloves garlic, minced
fresh green beans

Heat olive oil in large skillet. Cook pork chops 5 minutes or so, turning once. Add apricots, honey, and garlic to skillet. Cover and cook 5-7 minutes, till pork is done. In the meantime, steam the green beans in the microwave for about 6-7 minutes (I just put them in a glass bowl, add a little water, and cover with a lid).

I served this meal with artisan bread; brown rice would be good, too, and healthier.

Easy, quick, and healthy summer dinner!
